I'm not ready to talk about what happened on New Year's or what happened after. But I'll tell you this
If the Lord had not been on our side when men attacked us, when their anger flared against us, they would have swallowed us alive; the flood would have engulfed us, the torrent would have swept over us, the raging waters would have swept us away. (Psalm 124:2-5)
chicken breast tenderloins, boneless & skinless
1 c. yogurt
1/4 c. lemon juice
3 cloves of garlic, minced (I substituted powered--terrible I know!)
salt, pepper, and oregano to taste
medium onion, chopped into large pieces
parsley, chopped
Mix yogurt, lemon, salt, pepper, oregano and garlic in a bowl.
Mix chicken with mixture and marinate 1 to 2 hours at room temperature
Thread chicken on skewers with pieces of onion in between and broil for 5-8 min. on each side.
Serve with rice and chopped parsley or
For a sandwich
Stuff chicken and onions into a bread of your choice, top with chopped parsley, and enjoy!
(Hint: serve it up truly Egyptian style with lemon quarters for extra squeezing.)
